Pdfs from picture files cannot be converted to text . In other cases yo can use copy paste

In Adobe go to File and then Save as Text. It will save the PDF as a txt file.

that all depends on the pdf file and how it was made. If it was from a scanned image. you can’t. One way to tell is to try and select a few words one 1 page. If it selects the entire page instead, then you can’t.
